Day 29 — A song from your childhood
i love this song! i used to stand on my swingset, on the top of the slide part, and holler this song out at the top of my lungs. uncle harold (second, no, great uncle actually) played in a band while i was growing up & he'd play this song just for me. he'd even say "and this one here's for mandy, get to dancin' little girl" or something epic silly like that.

I have soooo much to say about this. Probably too much. When Labyrinth came out I was 5. I believe I was a little older when I first saw it. It was the most amazing thing I had ever seen in my short little life. Everything about it captured my imagination. I wanted to be absorbed by the world of the Labyrinth.
I'm assuming you've seen this movie, so if you haven't, you might want to stop reading now. This is a little bit of a spoiler. It's obvious, but a spoiler.
I never, ever, ever, and still to this day!!! can not understand why Sarah chose to take her brother back home over living a magnificent life with Jareth. WHY SARAH?!?!? WHY?!?!? I would have taken David Bowie in a heart beat. Give me that beautiful dress, dance with me, and sing to me and I will be your slave. lol
I am 29 now. I still want to join the Labyrinth world. I still dream of one day wearing her dress. I still know all the words to all of the Labyrinth songs, I can do the lines for all of the characters, and unlike Sarah, I always remember that line and would never use it against Jareth.

woah! look at this bit of craziness!
as if things haven't been crazy enough (thankfully i'm still alive and heather hasn't exploded [yet])... here's a bit of awesome for y'all to attempt to decipher. first, a smidgen of background story.
in high school, i purposefully misspelled things. allllllllllll the time. wrote in lower case, and made circles instead of dots over my i's. tried to have handwriting that was as vertically focused as possible. i wrote tons of poems like this, plus notes to heather, and ten pages letters to my out of town boyfriend. teachers complained about my handwriting, but at least i spelled things properly for them.
sadly, i cannot find my actual high school journals. on the upside, being insanely anal retentive and so sure that i was going to be a 'serious poet' i have copies of every poem before mid-98 re-written in spiral notebooks, printed out (in dot matrix, none the less) and saved TWICE in freakin' wordpad. i was a hot mess back then - holy. fucking. hell. full of angst. epic depressed for no reason. and oddly self-righteous! i can't help but giggle at these when i read over them again.

I know it's been a little bit dead around here (music excluded!) for the past few days. Amanda survived a very busy and crazy two weeks and I had a nice little scare with appendicitis. What a weekend! So to perk things up and remind you of why you really like to read Squeals & Glitter we've decided to each post a poem we wrote while in high school or those younger angsty years. >.<
I have tons of journals I've decorated just filled with my random writings and musings. This goes for all time periods of my life. Maybe one day after I'm famous for my amazing writing (I'm smirking, you just can't see it!) all these journals will be worth something.
My poem was written in between leaving high school and starting at Colorado State University. I would have been about 17 or 18. I've scanned the cover of my notebook so you can get an idea of what may be written on the pages it contains.
I have tons of journals I've decorated just filled with my random writings and musings. This goes for all time periods of my life. Alright, let's just get to the poem shall we? I've typed it exactly as it is written in my notebook. It is titled "the past." Seems quite appropriate eh?

caught a lite sneeze - i remember watching this version on the oxygen channel, bawling my eyes out. i do that every time i see anything 'new' from her. man, she's breathtakingly gorgeous here. wow.

Honestly, it's been awhile, but I know my fingers know this song without any prompting from me. I can play My Friends by Red Hot Chili Peppers on the guitar.
I have quite a few songs I used to know how to play but I'm not real sure how I'd do if I picked up my guitar again and tried. My Friends would be no problem though. I used to sit and play it over and over and sing my little heart out.

this song takes me back to ... 2000? 2001? when i worked at toys r us and roger had an mp3 player - the first person i had ever known to have one! it was so small, physcially, and only held ... 512k of music? 20 songs or something? anyways, this was one of them. i'd balance out the register tills, up in the tower, at 7 in the morning and roger would be down in the main area doing something, and he'd let me borrow this and i'd just shake-a-booty. Ok, first of all I have something I want to say. It's important.
If I get any shit from ya'll, (and by ya'll I mean Amanda and well everyone *lol*) I will cry in the bathroom all day long and not come out. We all have our weak sappy moments and yes, some of them may be kinda Twilight related, but that doesn't mean you have to rain on someone's parade. *giggles*
Alright, that being said, my song choice is Never Think by Robert Pattinson. I apologize for the pics of him in the video. I swear I'm not a crazy Rob fangirl or even a crazy Twilight fangirl for that matter. Crazy is the keyword there. I just did the best I could for finding the song. >.<
Now, if you don't want to read mushy, move on to another post. That's the only warning you're gonna get.
I like to daydream of dancing slowly to this song with my honey. We have plans for a party and vow renewal next year (ten years!) and I'd love to use this song. *sighs* Just a really close slow dance as our first official dance since we've never had one. i had big plans for a my 'perfect' wedding - in a spectacular garden, beneath a gazebo, with the first dance being some kind of well-rehearsed show of spinning, holding, dipping and awesome. fireflies at the reception. best laid plans, blah blah blah ... (sigh) ... one thing i would keep is the song i choose for the father/daughter dance. it's a beautifully simple song, and it still manages to get me kinda teary. i blame it on being a daddy's girl.

i listen to a lot of different music when i'm sad, just like i do any other time. it's mostly tori, as she evens me out and helps me move from sad to ... well, a place of at least being even & stable. however, i've gotten to where i try to move myself up from being even, and this song helps. the music's uppity and fun, although the lyrics express a sad sort of frustration mixed with a determination. ah, fuck it, i'm tired of trying to explain it.

and it's all because of you ...
is my music choice today! again! are any of y'all tired of hearing us go on and on about music, dear readers? well, fret not, the month is almost over ... but until then, have some more music chit-chat!! >:)
today's prompt was for happy music, and i picked a ne-yo song. he's also my artist of the week! of the past two? hell, probably of the month (after tori & gaga, of course, derr)
the first video here is for "closer" - this is how i discovered ne-yo. it was early last summer, back when i had cable (canceling it all of a month ago, i only miss it a little). i'd park myself down in front of the telly and watch VH1 soul for a couple of hours over the weekend, usually sunday late morning with coffee. this came on, and my jaw dropped. like i said before, i love clean and simple dance moves, he's got a fantastic voice, he's well dressed, the TATTOO ON HIS NECK (yum yum) ... this music - when it's good like i think it is here - is my crack. also a little secret about this video: it reminded me of how i wanted to be a dancer, when i was a little girl. i wanted to dance in janet jackson videos, or videos like this. no no no - not because i could strut around half naked ... ok, fine, maybe a little, but only now. but that wasn't the driving force when i was ten! i promise
this next song is the first track of his second album. this is another song that makes me happy. like, i want to stand in the middle of my living room with this on the stereo, swaying my arms out like he does in the sequined jacket blazer thing (all mariah carey style, sup playa?), belting it out. i'm a dork, i know. and i'm dramanic.
ok, and the final one. it also makes me happy. in that silly way that listening to TLC makes me happy. there's also something ... giggly ... about singing "she's fly effortlessly" *snorts and rolls around laughing*

there are soooo many things in the song that i just love love love. it makes me happy to hear it, even when i'm not in the best mood. hearing it when i am happy elevates me through the roof. i can't listen to it just once - i have to listen five times, minimum. his voice is great, the choreography is fantastic (albeit sporadic & simple), i love her clothes and shoes, i love how the song makes me feel - MAN. i love soooooooooooooo many things. i dance in my chair, or where ever the hell i am when i hear it. it makes me smooshy in special ways. and gross. and stupid happy. but i like that and i deserve it. so, here you go. you should listen at least five times, too

Day 20 — A song that you listen to when you’re angry
so, even when i'm angry, i wanna do some booty shaking, it seems. i think it's mostly the lyrics. also, the way shit just crams together around a minute in, and then again around 2:20 that helps me. that's angry. then it resolves, calms down, and i feel better. granted, phil screaming in a pantera song is also angry, but i haven't been in the mood for him lately. he's more sexy, less angry in my head (and other places - ooh ooh! lol).

hooray! it's postsecret sunday again! the best thing about my whole weekend! >.<
this one, i just HAD to pick ... because i do (used to do, when i had interviews) the same thing!!!! oh, who am i kidding - i even currently do it up at work if i'm going to be in a large group meetings or workshop. plus i like the extra li'l kick i get from feeling attractive & sexy. skirts that show off my great gams help me get that feeling.

Heather's Truth
Ok, so here was the truth I chose:
in a hypothetical universe, you wake up and all of your tattoos are gone. blam, disappeared. you run to the doctor's (well, fly, in a hover car) and she tells you that your skin will never hold ink again. your only way of getting a tattoo is to take it from someone else, like a skin transplant. whose tattoo would you take and why?
I really thought about this all weekend. I'm assuming that if it's a skin transplant then the other person looses the tattoo and I gain it? I even thought that maybe the person still gets to keep it. Like when you get the tattoos on the wrappers from Fruit Stripe gum. You lick your skin and stick the picture on it. It transfers to your skin and stays on the paper at the same time.
Also, the whole thought of this scenario is just so depressing. Every tattoo I have is like a small memory or story of a specific time in my life. There is an exact reason for each one of them. I have never just said "Oh! That would look cool as a tattoo or that's some awesome art!" Everything had to have special meaning. I would lose all that and would have to find a new way to tell my story. Ok, ok, anyway after much consideration, here's what I decided; there are only four tattoos I would take.
The first would be my Type O Negative tattoo. See it over there on Mr. Steele's right shoulder. It looks like mine!! ZOMG! lol Anyway, I would take his. FROM HIM. (This IS a hypothetical universe remember?) And should it be a problem getting his, then we can fix it by taking it from one of the other band members. I thought of everything! ^.^

Next, I would take Johnny Depp's Jack Sparrow tattoo. Without the Jack please. I hate stealing that from him, so I hope it works like the Fruit Stripe gum wrappers. I've loved that tattoo from the moment I saw it!
I have two more but I would need my husband's help with these. Since I'd be losing my wedding ring, I'd want a copy of his. This one was so hard!! I couldn't decide about the whole favorite album part. I looked through all of my music and really wanted to find the cd that I just love to listen to all the way through. It also had to be one that I choose often. I've decided to go with Saturday Night Wrist by the Deftones. Love, love, love me some Deftones.

I know, I'm so boring! I thought really long and hard about it yesterday. I'm going to be sitting around my house being lazy allllll weekend long. What fun would it be to go from room to room declaring that I'm the Flash?? I wanna declare it to THE WORLD! The kids would just tell me to stop being a krod. =/
In fairness I'm going to do the truth so I have to actually work for it a little. Would have been so easy to sit around reading as The Flash though! *sighs* If anything, Amanda dear, take pleasure in knowing that I'm completely spazzing out about losing my tattoos. i don't really listen to the radio, unless you count listening to npr, and i do that for maybe 5 minutes a day when i'm driving to work. occasionally i'll pop open pandora, if i can't decide on an album or a playlist to listen to in itunes, or can't focus. pandora is where i found this song. i love it. i have two stations that she shows up on. it's haunting, it's sorrowful, it's aching. it's beautiful.

The Last Mistress - Heather's Review
This movie (The Last Mistress) is not even worth the time it would take to review it. Do I have to review it? Is that an absolute must? Can I just make fun of it? For instance, was it a requirement for every actor/actress to have enormous lips? When they kissed, it was like they were swallowing each other's faces. It was...creepy.
And main character dude named after a rhinocerous, are you Scarlett Johansson's brother? Because that was all I could see when I watched you. Well, that and you are too beautiful to even be allowed to exist. But I don't really dig Scarlett...so why is it hot on a man? *shakes head* Something to ponder later.
The story was nothing new or even creative; man of the aristocracy has mistress but is going to get married to a woman of the aristocracy. Was it supposed to be Victorian era? I dunno. I do know they did not have breast implants back in the day. But you know, since this movie was just so accurate, I may be wrong about that. And the sex...wtf? I don't have sex like that, do other people have sex like that? Am I doing it wrong? I believe the description said "steamy romance." Netflix and I obviously have different ideas of what constitutes "steamy romance."
I will however tell you about my favorite part of the movie. There's a nice little scene where there's some sort of costume party/dinner thing. One of the guests has THE BEST costume. Srsly, the best! I'm jealous of him so hard! He has the most elegant victorian footman looking pale blue outfit, a high white powdered wig, and you know what's on top of his wig? A SHIP! Yes, it's an ENTIRE ship!! Sails and all!! Wait, wait. Imma find a picture for you. Hang on.

Look! Here it is! It's the guy sitting in the chair. Sorry, you have to look kind of hard, but it was the best I could find! lol
That's it. I don't have much more to add. I just recommend that you not waste your time with it. There are so many other GOOD movies out there. It's not even worth it for the sex. Pervert, I knew what you were thinking, didn't I? lol Two stars cause I didn't hate it. I just thought it was stupid. =/

heather gave me three options, and i picked the last mistress. i loved the picture on netflix, and i was all "i wanna do some strips of my bangs into a little heart, sweet" ... plus the lady was hot.
the story is about love and hate, power and loss, and it's in french with english subtitles. i love hearing french spoken, it's almost as pretty as italian. mmmm .... italian food .... ok! ok! back to the movie. it's also set long long ago, back when women wore corsets and did crazy shit with their hair. the main character, vellini, is positively gorgeous. i like her face, and her hair, and the accessories she puts in her hair. and her outfits. and her attitude. i want fresh flowers every day! why not me!? (grumble grumble)
she has a love/hate relationship with someone she can't let go of. i wonder if she needs to hate him as much as she need to feel power over him, to feel as though he can't live without her (as he keeps coming back over a period of ten years). they used to love each other, once upon a time, then they lost someone close to both of them. she promptly loses her mind - things happen and the walk away repulsed with each other. he finds someone else and promises to love this new gal forever - as normally happens with plots like this, there's not necessarily a happy ending.
over all the story isn't original, but there were little gems in it. seeing the grandmother half-drunk on port, slid down in her seat, old and grey and oh so proper, but in the most un-lady-like position! vellini telling rhyno that he was her prisoner for now, and later she would make him her slave, then locking him a room. sexy sexy! LOL - maybe it was just the way she said it too. plus being hot. have i said that yet? she gets a look in her eyes, in a few places, that struck me, very familiar looks that i could relate to, could remember giving. now i sound conceited. oh well.
also sex on a rug made from a white tiger (or some kinda big cat) - that goes on my next 101 list. wtf really!?
i give the movie ... crap, how are we rating this again? four or five is highest? i give it three stars. is an easy movie to watch, and there are times when i like easy movies. with hot ladies and good costumes. i'm also recently obsessed with black lace, and that was in the movie. hooray! >.<

YAY! It's my music day and in honor of today's release of Prince of Persia: The Sands of Time I have a nice little video for you. Yes, the blu-ray is already in my possession (I bought it first thing this morning!) And yes, I've watched it at least once and I'm sure I will again before the day is over.
I am all about the imagination. Sometimes my biggest problem is that I live in mine too much. The Prince of Persia just helps to feed it! Helps? Hinders? Who cares! Nothing better than seeing all those cool special effects AND that long hair! *sighs* I love everything about it. Fantasy story, amazing characters, romance, danger, action. Sorry, when I get excited about something I seem to lose my ability to form coherent sentences.
Let's just move on to the video. The song is I Remain by Alanis Morissette. It's a gorgeous song. Love the Middle Eastern sounds throughout it. I confess I bought the soundtrack for the entire movie after seeing it in the theatre. It's really nice and I highly recommend it!

My silly secret!
It's a silly secret! At least I think it is. Eep! Now I don't know?! What if it's not silly and I really do need help??? AAAAAHHHHHH!!!!

Srsly. There are 14 journals in that picture. Only the two are in use. When I see a journal with a great cover and it's blank pages (mind you, that have to be the perfect pages) I just can't resist buying it. See that green one? Up at the top there? It's the most beautiful shade of green. The picture in it, some kinda southern-y style house, came with it. I have yet to stick in a picture of my choice. It's been a couple years. LOL But it was so perfect I couldn't resist it.

My newest purchase came in the mail yesterday. The little cassette tape on the bottom. He's from NerdJerk. The most expensive was the metallic umbrellas on your left. The pages inside are so creamy I could cry. The one above it, with the girls, I bought it because it had brown kraft paper and regular paper inside. It also made me think of travelling around the world with Amanda. And the best is on your right side. See the gorgeous red flower over there. That journal influenced me to get the same flower tattooed on my wrist. Actually, I took it into the artist and he drew it out for me. lol

this requires a little back-story. else it won't make much sense. or it will seem like i'm moving to being lesbian full time.
deep deep down, i'm a very structured, organized, colour-coordinated, list making control freak. srsly. i am. i've learned to be very careful in the ways i let myself express it.
once, while living in waco, a guy that i was seeing came over to the apartment. for whatever reason, i had told him to get something out of my dresser, across the room. it should be noted now, in the story, that i also have, for all of my control issues, the damnedest time telling my left & right apart. srsly. i still have to raise my hands to see the L on the left. i meant for him to go right middle, not left middle, drawer ... and he opened the wrong one. with my underwear in it.
not the worst thing for a boy to do - unless you had each piece rolled up nicely, sorted by cut, and then sorted by colour. in rainbow order, from palest shade to darkest of each color. i had (and still have, although not the same ones) a lot of underwear. this guy started laughing. and kept laughing. and kept laughing. aaaand kept laughing.
i was mortified.
he left that night - shortly after this little incident - i pulled them all out, unrolled them, made a huge jumbled mess and shoved them back into the drawer. yeah, i saw him a few more times after that, but i never EVAR sorted my underwear like that. so, hence, never again.
also, the only magazine i have in the house that's not dedicated to food is the gaga issue of vogue. the ONLY picture of anyone in their underwear, in there, is this perry ellis advertisement. wtf is the world coming to?! give me more half naked ladies. now. kthnxbai. (as if that statement doesn't sound 'full time lesbian' huh?)

This is cute! I think that if the person who made this feels this way, then it's probably true! So often you'll hear other people complain about their relationships, friends, family members, hell I even listened to a woman cry to her friend for an hour while I had lunch with the kids in a restaurant! (Really lady? You think we can't hear you at the next table? Nothing like going out in public to confess to your friend for the first time that your husband has been an alcoholic for years. *sighs*)
You hear the stories and you can feel relief that you don't have to go through the same things. Maybe it makes you realize that what you have is really good. I'll tell you what. My relationship with my bestie sure as hell is better than everyone else's. hehe Alright, alright. I won't get all mushy serious. This was a cute little secret. I'm happy for it's writer!

there were two postsecrets that grabbed me by the proverbial balls this week. i'm choosing to go with the one that's more lighthearted.
the only place i use a microwave is up at work. i don't want one at the house because i'm afraid i'll resort to eating a lot of crap, tv dinners & the like. yeah yeah, i know i can still eat plenty of crap without it, but whatever. i HATE standing there and just waiting for the food to heat up. so i'll either race to the loo, wash out my coffee and/or tea mugs (yes, i have one for each), wipe down the counter if it's a mess, or something. and like this postcard says, it has to be finished before the timer ends. i also hate having the timer go off. i usually stop it, or open the door, with a second or two left.

NO WAY), and i remember putting this on the record player and absolutely losing my mind. i'd move the stereo speakers into the window during the mid-morning, when i'd go to lay out & be that stupid "i need to get tanner" teenager and read & jam out to led zeppelin. she also had some clapton & cream - another great band, but zep's my favourite.

Day 10 — A song that makes you fall asleep
today's song was difficult to choose. i can't really sleep with music or noises anymore, like i used to (i lay there & pay attention to what i'm hearing) and i didn't read the prompt as "put you to sleep because it's boring" - why would you continue listening to a song that was boring? just turn it off! anyways - sound in a dark room, by telefon tel aviv

This song doesn't make me fall asleep in the bad sense. It's just a song I like to put on as I'm falling asleep. If I really wanted one that made me sleepy, I'd have to have my mom come over and rock me while she sang The Beatles or something. hehe
I actually enjoy the entire cd this song comes from. It's called Black Aria and it's by Danzig (sorry! Danzig again!) I have the old original cd and it's one of my favorite possessions. Check it out if you have the chance!

FOOOOOOOOOOOOOOOOOOOOOD
mmmmmmmmmm .... food. i love food. southern food. soul food. mexican food. italian food. thai food. indian food. chicken fried steak. mashed taters. gravy. GRAAAAAAAAAAAAVY. if i were a zombie, i'd still go for gravy over brains. mmmmmmmmm

alright, betters. i've never really been super picky about food. i don't like raw oysters because they feel like snot sliding down my throat, and i don't like carrots because they taste disgusting. THEY DO. stfu. i love my steak bloody, but i'm an epic wussy when it comes to hot spices. still, i do like trying new things (see my 101 goal of new foods, and foods i thought i hated & am retrying) and i love to cook. i'm a better cook than i am a baker, although i'm pretty decent at making breads. and what goes well with breads, besides butter? why soup, dear reader! soup!
soups are versatile, with eleventy bamillion combinations. i made soup for heather twice when i went to visit her this year. soups are nutritional, and they're one of those foods that get better the longer that they sit. stews and chowders are good too, but soups are my favourite. one of my recently acquired loves is indian food. i grew up in the sticks, i thought indian food meant native american food. the only indian person i had ever seen was my allergist, and i was so little & naive i thought she was just from 'somewhere else' (read: sheltered child in a tiny, tiny town). i loved her accent, even though she kept hurting me with those damned allergy shots. anyways, i found a recipe online for mulligatawny, and made it, and fell. in. loooooooooove. it's the most amazing soup ever, i think. i share it with you today, with this one uhm ... warning. i don't ever measure much of anything when i cook. i use recipes for ingredients, and taste as i go, and i encourage you to do the same. like for this one, i use more coriander, cumin, onion & garlic.
4–6 tablespoons olive oil, divided (or butter, which i prefer)
2 cups cooked chicken, cut into bite-sized pieces
1 medium onion
1 tablespoon crushed garlic
2 tablespoons finely grated ginger
1 teaspoon ground turmeric
2 tablespoons ground coriander
1 teaspoon ground cumin
1 teaspoon chili powder
1 can diced tomatoes
6 cups chicken stock
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
1 teaspoon garam masala
1 tablespoon freshly squeezed lime juice
2 cups cooked rice, as accompaniment
2–3 limes, quartered, for garnish
2–3 fresh cilantro, for garnish
heat some of the oil or butter in a big pot. add the chicken & brown lightly (almost completely cook, but not quite). remove and set aside. heat more of oil in the pot and add the chopped onions. sauté until soft. add the garlic and ginger, stir well and cook for a minute or so. add the turmeric, coriander, cumin, chili, and garam masala, then cook for two minutes. adjust the heat as needed to prevent burning. add stock. add the chicken to the soup. bring to simmer, then reduce heat to medium, and cook for 20 minutes. add the salt, pepper (to taste). squeeze in the lime juice. divide rice among serving bowls and ladle the soup over. garnish with lime wedges and fresh cilantro.
cook's note: also really stinkin' good if you add coconut milk, along with the chicken - that's what i did over at heather's

I'm crazy about baking. Like crazy, crazy!! I like to bake pretty much any recipe you put in front of me. Sweets are also my thing. They are my biggest downfall. It's a tie between Red Velvet and Chocolate as my favorites for cakes. Which really isn't surprising considering red velvet is just a glorified chocolate cake anyway. It's always best with cream cheese frosting. I'm going to go cry just thinking about this.

So anyway, if you've read this blog or some of the comments before, you have probably figured out by now that I'm trying my best to lose weight (another sweet little opposite for these besties! lol) I'm using the Weight Watchers program with much success so the recipe I'm sharing with you today is from them! Don't be scared by it though!! You'll be eating a yummy and healthier cupcake if you decide to make this recipe.
Imagine my excitement when I came across a red velvet cupcake with cream cheese frosting on the WW website last week. I absolutely had to try it, you know just in case a better for you cupcake could actually taste good! While it's not the absolutely to die for flavor of a real red velvet, it's close enough that this little chickie is happy, happy, happy!
Red Velvet Cupcakes with Cream Cheese Frosting
2 1/4 cups all-purpose flour
1 tsp salt
1 tsp baking soda
2 Tbsp unsweetened cocoa
1 1/4 cups buttermilk
1 tsp vinegar
2 tsp vanilla, divided
3/4 cup granulated sugar
1/4 cup light butter, softened
2 large eggs
1 cup powdered sugar
2 Tbsp Neufchatel cheese, softened (That's basically a light cream cheese! =D)
1 oz. bottle of red food coloring
Preheat oven to 350ºF. Prepare 16 muffin tins with paper muffin liners.
In a large bowl, mix together flour, salt, baking soda and cocoa; set aside.
In another large bowl, mix together buttermilk, vinegar and 1 teaspoon of vanilla extract; set aside.
With an electric mixer on high speed, cream granulated sugar with butter until light and fluffy. Reduce mixer speed and add eggs, one at a time, until well-incorporated.
Add about 1/3 each of flour and buttermilk mixtures to sugar mixture; beat until just combined. Repeat until all of flour and buttermilk mixtures are incorporated; add red food coloring and mix well with mixer (do not over beat batter).
Fill each muffin tin about 2/3 full with batter.
Bake until a toothpick inserted in center of a cupcake comes out dry, about 25 minutes; cool for 5 minutes in pan and then cool completely on a wire rack.
Meanwhile, to make frosting, combine powdered sugar, cheese and remaining teaspoon of vanilla in a medium bowl. Beat with an electric mixer until well-combined and creamy. Frost cooled cupcakes. Yields 1 iced cupcake per serving.
For anyone who may be interested, ONE cupcake is THREE points! I also use Mexican vanilla when I bake so the frosting in my pictures isn't white. If you're looking for the pure white, you need to use a clear vanilla! =D

And tada! There you have it. Cupcakes you can fully enjoy!! If you really do try them, let me know! I'd like to see what you thought about them. Or if you have a great healthy/lowfat chocolate cake recipe that rocks, let me know. I have yet to find one that makes me squeal!

A song that reminds you of a certain event...
I'm sorry! This post is so late!!! Really, I was trying to think and think about what song reminds me of an event and I just couldn't come up with something. That really seems strange to me. Music is such a big happy part of my life, why don't I have an event to go with it? I really didn't want to use what I'm going to use, but it's 10:30 at nite so I'm running out of time.
So, song, When You Were Young by the Killers. Event, going into labor with my son. LOL That's why I didn't want to use it. Yeah it's all frickin' great and happy (not really *snickers*) that you're having a kid but labor? Why would I want to remember that? It's quite an event though so it totally counts.

I was living in Hawaii for this event. We had just had a big earthquake. There was no power for the entire day, even Wal-mart was closed down. That should tell you something. I was 42 weeks pregnant (that's two weeks overdue for you non-baby people) and I was scheduled to be induced the very next day. Well at midnite I was up pacing because labor had started coming on naturally.
I didn't want to run to the hospital immediately so I was doing anything to just not think about it. My hubby took me downstairs to time the contractions and FINALLY the electricity came on at 2 am. We turn the tv on for some background music and this was the song playing. So while pacing, timing, breathing hard I listened to this damn song and every time I hear it now I get all panicky about those stupid contractions! The event of all events to remember: baby #2 (the LAST baby)

i remember being at home, watching this premiere when it came on tv, sitting 3 foot away from the telly with my little brother, with my parents on the couch. we had waited for this day for a while now, and we were even allowed to have popcorn & coke!! i was in awe of EVERYTHING in this video. srsly. i don't remember breathing through any of it. it's a miracle i survived.
one of my friends had mentioned how, for many of us, the very end of this video was the first collective WTF moment of recent years.
i remember being at home, watching this premiere when it came on tv, sitting 3 foot away from the telly with my little brother, with my parents on the couch. we had waited for this day for a while now, and we were even allowed to have popcorn & coke!! i was in awe of EVERYTHING in this video. srsly. i don't remember breathing through any of it. it's a miracle i survived.

ok, now that that's out of the way ... this song takes me back to the beginning of my last year at texas a&m. my roommate and i were walking around campus, either headed to or from our dorms, and there were some guys unloading their truck next to the dorms. they were playing this song, and merlie-girlie and i started dancing. you know, the silly kind of almost square dance where you link arms & just go in circles? yeah, like that. and singin' at the top of our lungs, and laughing like loons.

I'm giggling thinking of this. I had just moved back to Texas from Colorado and met this really awesome guy. We would "lay around" and listen to Moby. When I hear this song, I think of Texas and his room. Black lights and all. hehe
